Apulian Garbanzo and Spinach Soup
Ingredients:
1 cup Apulian garbanzo
4 cups vegetable broth
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
1 teaspoon dried rosemary
2 cups spinach, chopped
Salt and pepper to taste
Directions:
Soak the Apulian garbanzo overnight in a bowl of water. Drain and rinse the garbanzo. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook for 3-5 minutes until the onion is softened. Add the garbanzo, vegetable broth, oregano, and basil. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes until the garbanzo is tender. Add the spinach and season with salt and pepper. Cook for 5 more minutes until the spinach is wilted. Serve the soup hot with your favorite toppings and garlic bread. Enjoy!
