Red Lentil Curry recipe
Ingredients:
– 1 cup hulled red lentils
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon ground turmeric
– 1 teaspoon ground ginger
– 1/2 teaspoon black pepper
– 1 cup vegetable broth
– 1 can diced tomatoes
– 1 teaspoon salt
– 1/2 cup frozen peas
Directions:
Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, cumin, coriander, turmeric, ginger, and cayenne pepper and cook for another minute. Add the broth, tomatoes, lentils, and salt and bring to a boil. Reduce the heat to low and simmer, covered, for 20 minutes. Add the frozen peas and cook for an additional 10 minutes, or until the lentils are tender. Serve with basmati rice or naan bread. Enjoy!
