Risotto "Portofino" with zucchini & bottarga

DIRECTIONS: bring 750 ml of water and 2 or more tbsp oil to a boil in large non-stick skillet or pan.
Stir in the content of the package, cover and cook on medium-low heat for 12 minutes. Remove the lid and keep cooking UNTIL MOST OF THE WATER HAS BEEN ABSORBED AND THE SAUCE IS CREAMY (about 2 minutes). Season to taste, add 2 tablespoons of warm water and a knob of butter.
SUGGESTIONS: during cooking add 1/2 glass of wine; add 4 tbsp of heavy cream and 2 tbsp of tomato sauce approx. 2 minutes before removing from flame.
WINE PAIRING: Traminer or other white wines.
