The caponata is a classic Sicilian dish that is made up of a variety of vegetables, herbs and spices. This particular version is made with eggplant, capers, tomatoes, olives, celery and onions, as well as garlic and herbs. The cous cous is a traditional dish of Tunisia and North Africa, but is also popular in Sicily. The cous cous is made from semolina, which is a coarse wheat flour, and is usually steamed with a broth of vegetable stock, herbs and spices to make a light and fluffy grain. The cous cous is then combined with the caponata to create a hearty and flavorful meal.

Tiberino's Trapani cous cous is much easier to prepare: all the ingredients are included in the same package and can be cooked in one-pot, making it a time saving meal. All you need to do is add some water and olive oil, bring the mixture to a boil and then cover and reduce the heat to a simmer. This Sicilian cous cous with caponata from Trapani is a delicious and easy to prepare meal that is perfect for busy weeknight dinners.

You don't need to be a master chef to enjoy this traditional Sicilian dish.
