Spaghetti all'Assassina or simply "L'Assassina" is a recipe born in Bari. It is a dish of spaghetti with spicy sauce sautéed in a pan until crispy.

The result is incredibly appetizing! The more or less marked spiciness depending on taste and the crunchy crust make this dish an excellent and perhaps more original variant of the famous Arrabbiata.

PREPARATION : bring 600ml of water and 2 or more tablespoons of extra virgin olive oil to the boil in a non-stick pan.
Pour the contents of the bag, cover and cook, stirring occasionally, UNTIL THE WATER IS COMPLETELY ABSORBED (about 12 minutes). Season to taste, drizzle with plenty of olive oil and pan-fry the spaghetti until completely dry and crispy (about 8 minutes).

TIPS : serve with fresh burrata.

WINE PAIRING : Cabernet or other medium-bodied red wines.
