Our imported green lentils come from Canada and stand out for their compact yet tender texture, allowing for even cooking without falling apart. Their thin skin cooks perfectly and does not become tough as it often does with other lentil varieties.
Their regular size, due to careful selection, always ensures ideal cooking, making them a versatile ingredient to use in many dishes: vegetarian dishes, soups, stews, and side dishes.
LENTIL SOUP
INGREDIENTS:
- 1 cup of green lentils
- ½ onion
- 1 carrot
- 1 stalk of celery
- 2 tablespoons of extra virgin olive oil
- 2 liters of vegetable broth
- 2 tablespoons of chopped parsley
- Salt and pepper to taste
PREPARATION: Dice the onion, carrot, and celery. Put the oil in a large pot and add the onion, carrot, and celery. Cook over medium heat until soft. Add the green lentils and mix with the vegetables. Pour the vegetable broth into the pot and bring to a boil. Reduce the heat and simmer the soup for about 25-30 minutes, until the lentils are tender. Adjust seasoning with salt and pepper, add the chopped parsley, and serve.
PAIRING: Rosé or light red wine.
