The “Zuppa Pugliese” is an ancient recipe bequeathed from one generation to another. It is a very simple recipe, prepared using only legumes and usually eaten as a meat alternative. Today it is highly appreciated for its intense and simple flavor.
PREPARATION: soak the packet ingredients in lukewarm water overnight with a pinch of baking soda. The following day change the water, add celery sticks, cherry tomatoes, bay leaves, some garlic cloves and cook on low heat for about 2 hours or for more if necessary. At the end of cooking season with salt and flavor with robust extra virgin olive oil.
TIPS: serve with 4 slices of toasted bread seasoned with salt, Pecorino cheese, pepper and extra virgin olive oil. Place the bread slices in the bottom of the soup plate before serving.
WINE-PAIRING: medium-bodied red wines
INGREDIENTS: fava beans 47%, split peas, spelt, beans. It may contain traces of gluten, almonds, hazelnuts, celery, tuna, mustard, cuttlefish, eggs. No added glutamate, chemical ingredients or animal derivatives.
