The “Zuppa Pugliese” is an ancient recipe handed down from one generation to another. It is a very simple soup prepared using only legumes, and usually eaten as a meat alternative.Today it is highly appreciated for its intense and simple flavor.
PREPARATION: soak the packet ingredients in lukewarm water overnight with a pinch of baking soda. The following day change the water, add celery sticks, cherry tomatoes, bay leaves, a some garlic cloves and cook on low heat for about 2 hours or for more if necessary. Season with salt at the end of cooking and flavor with robust extra virgin olive oil.
TIPS: serve with 4 slices of toasted bread seasoned with salt, Pecorino cheese, pepper and extra virgin olive oil. Place the bread slices in the bottom of the soup plate before serving.
WINE-PAIRING: Cabernet Sauvignon or medium-bodied red wine
INGREDIENTS: fava beans 47%, split peas, spelt, beans. It may contain traces of gluten, almonds, hazelnuts, celery, tuna, mustard, cuttlefish, eggs. No added glutamate, chemical ingredients or animal derivatives.
