Mantua's cuisine boasts a princely ingredient: Pumpkin!
Prepared with natural ingredients and plenty of yellow pumpkin, this risotto is a delight for its unmistakably delicate taste.
Try it with the addition of one or two tablespoons of herb cheese or gorgonzola, it will be truly unforgettable!
PREPARATION: In a non-stick skillet or pot, bring 750ml of water and 2 tablespoons of extra virgin olive oil to a boil. Pour the contents of the packet, cover, and cook over medium heat, stirring occasionally, until the water is almost completely absorbed and the risotto is creamy. Add 1 ladle of boiling water for a less al dente cooking. Adjust salt, let it rest for 5 minutes, and add 1 or 2 tablespoons of lukewarm water to amalgamate before serving with melted butter.
TIPS: Add 1/4 glass of white wine to the water. Cook it like a classic risotto, adding water gradually. Garnish with butter and 2 slices of minced smoked salmon.
WINE PAIRING: Traminer Aromatico DOC or medium-bodied white wine.
